Homemade Cheese & Bacon Potato Skins Recipe
Ingredients
- (3) Idaho or Russet Potatoes
- (1) cup Cheddar or Colby Jack Grated Cheese
- (6) strips of Bacon (cooked and crumbled)
- Salt (to taste)
Instructions
- Preheat oven to 400 degrees.
- Add foil to bottom of cookie sheet and spray well with cooking spray.
- Wash and cut the potatoes into slices (about a quarter-inch thick) and place on cookie sheet so they are not touching.
- Spray tops of potatoes with cooking spray (I use olive oil).
- Add a small amount of salt to taste on the top of the potatoes.
- Bake potato slices for 20 minutes.
- Pull out of the oven and add grated cheese and crumbled bacon.
- Cook for an additional 3 to 5 minutes until the cheese is melted.
- Serve with sour cream or ranch.
