We love to eat cookies at our house. Growing up, my parents did coffee and a cookie every evening when my dad got home from work (it's a Dutch tradition), and my kids love it when my parents visit and call, "It's Coffee and a Cookie time".
Needless to say, we like to experiment with different cookie recipes. We have our go-to recipe (oatmeal chocolate chip cookies), but it's fun to mix it up. These Butterscotch cookies are delicious, and like peanut butter cookies, they're firm and evenly shaped, so they also make great gifts since they look so nice baked.
Preheat oven to 350 degrees. In a large mixing bowl, cream butter and sugar. Add in eggs, vanilla, and vinegar. Add in all dry ingredients and mix well. If the batter is not firm, you can add up to two more cups of flour.
Roll into balls and place on greased cookie sheet. Press down gently with your palm and create an "X" with a fork. Bake until edges are golden, about 13 minutes. Let cool before serving.
