In a large skillet, combine brown Italian sausage until crumbled and cooked through. Drain.
Return sausage to skillet and add tomatoes, water, basil, and sundried tomatoes. Cook over medium-high heat for 5 minutes. Stir in spinach.
Spray inside slow cooker with non-stick cooking spray. Ladle a scoop of the meat sauce into the slow cooker.
Add layers of noodles, cheese, and sauce. Repeat each layer until all ingredients are used, ending with a layer of sauce.
Cook on high for 3 to 4 hours or low for 6 hours. Remove lid and add a layer of mozzarella. Cover until cheese melts. Serve.

- 2 cups fresh spinach, coarsely chopped
- ½ cup sundried tomatoes in oil, drained and coarsely chopped
- 2 cups mozzarella
