It's almost fall, which means it's time for everything pumpkin spice! These Pumpkin Spice Sugar Cookies don't disappoint. They're easy to whip up and taste like a little bit of fall. They're perfect for a game day party or even as a Thanksgiving dessert or snack.
First, you need to preheat your oven to 350 degrees. Then, beat the sugar and butter in a large mixing bowl until they're well combined.
Then, mix in the yolk, vanilla, pumpkin puree, and food color.
In a separate bowl, combine flour, baking powder, cinnamon, pumpkin pie spice, and salt.
Gradually mix in the dry ingredients into the pumpkin mixture until they are well combined.
Using a cookie scoop, drop balls of dough 2 inches apart on a cookie sheet. Use a fork and press down the dough balls and sprinkle with sugar. Bake for 10-12 minutes, remove from oven and cool.
If you prefer, you can also make a drizzle for the top of the cookies. To make drizzle, just combine about 1 cup of powdered sugar, a tablespoon pumpkin puree, ½ teaspoon pumpkin pie spice, and 2 teaspoons of water. Drizzle over cookies.
