Peach Jam Cookie Sandwiches Recipe
Create these fun Peach Jam Cookie Sandwiches for the holidays. They're perfect for a holiday party or a cookie exchange, and you can substitute nectarine or apricot jam in the recipe if you prefer.
Ingredients
- 2 Cups all-purpose flour
- 6 Tbsps butter
- 1 Cup granulated sugar
- 1 teaspoon vanilla extract
- 2 Egg yolks
- 1 teaspoon salt
- ½ Cup peach preserves
Instructions
- Pour the flour into a large mixing bowl.
- Chop the butter into small pieces and add them to the flour.
- Mix until the mixture starts to form like breadcrumbs.
- Add in the sugar, vanilla extract, and egg yolks.
- Blend on medium speed until dough forms.
- Add in the salt and blend on low for another 30 seconds.
- On a lightly floured surface, roll out the dough into 2 round 1½ inch discs.
- Cover with plastic wrap and leave in refrigerator for 40 minutes.
- With a cookie cutter cut out round shapes in one dough, and cut out round shapes with a hole in the middle in the other dough.
- Preheat oven to 350 degrees.
- Place cookies on a baking sheet and sprinkle sugar on top.
- Bake for 15 to 20 minutes until edges start to brown.
- Remove from oven and let cool.
- Spread peach preserves on the bottom of the cookies and put them together like a sandwich.
- Serve and enjoy.
