I'm always looking for fun patriotic dessert recipes, and this No-Bake Patriotic Berry Whipped Coconut Mini Pie recipe is perfect! It's a mixture of red, white, and blue with strawberries, coconut, and blueberries, with a pie base of whipped coconut milk.
It's easy to make, since you use prepurchased Keebler mini pie crusts. Plus, there's no baking required so you don't need to heat up your home.
You do need to plan ahead a day or two so that you can stick the coconut milk in the fridge and give it time to separate. Basically, the lighter coconut cream separates from the water and sits at the top of the can once it separates.
Make sure to buy coconut milk with just coconut extract and water listed in the ingredients. Some brands include an emulsifier, which keeps the cream from separating from the water.
Place a can of coconut in the back of the fridge overnight. It needs to be in the back so it gets really cold and the coconut milk separates from the coconut water.
Open and scoop out just the coconut milk.

- 3 strawberries
- 15 blueberries
- 1 can coconut milk (13.66 fl oz)
- 2 tablespoons shaved coconut
- 3 Keebler mini pie crusts
Instructions
- Place can of coconut in the fridge overnight. Keep it in the back of the fridge so it gets really cold and the coconut milk separates from the coconut water.
- Open and scoop out just the coconut milk.
- Using a stand mixer with whisk attachment whisk well until the coconut milk resembles whipped topping. If you would like to sweeten it then add a little honey. We don't add it but some people want the sweetness.
- Place the whipped coconut cream into the mini pies.
- Wash strawberries and blueberries.
- Cut the tops off the strawberries and slice lengthwise.
- Place the berries on top of the pies and put the shaved coconut down the middle.
- Keep in the fridge until ready to serve.
