Lemon Pudding Recipe

Ingredients
- 1 Cup Greek yogurt
- 2 Eggs yolks
- ¼ Cornstarch
- 1 Cup milk
- 2 Tbsps lemon juice
- 2 Tbsps honey
- 1 teaspoon vanilla extract
- 1 Cup vanilla cookies, crushed
- Lemon peels
Instructions
- In a large pot over medium heat, mix the Greek yogurt, egg yolks, cornstarch, milk, vanilla, lemon juice, and honey.
- Stir until the first bubble forms.
- Remove from the heat and let it cool for 5 minutes.
- Transfer to a bowl, cover it and refrigerate for 2 hours.
- Add some of the crushed cookies in the bottom of glasses.
- Pour the pudding into them.
- Top it off with another layer of crushed cookies and lemon peels.
- Serve and enjoy.
