I love pulled pork - whether it be as the main dish with bar-b-q sauce and veggie sides or on a pulled pork sandwich! With your instant pot, you can make this pulled pork recipe in just over 2 hours from start to finish. No waiting for your pork to cook all day in the slow cooker. All you need is an Instant Pot (pressure cooker) with a pork roast, apple cider vinegar, chicken or beef broth, and assorted spices. So delicious!
Place the pork roast in the electric pressure cooker pot with the fat side facing up. Add dry seasonings on top. Pour apple cider vinegar over the pork roast.
Add the chicken or beef stock around the sides of the pork roast to avoid removing the seasoning.
Cover the pressure cooker and set the valve to sealing. Program for “manual” or “pressure cook” on high for 2 hours. Allow the pressure cooker to release naturally for 10 minutes before quick release.
Remove the pork roast from the pressure cooker and use two forks to shred the meat. Discard any excess fat. Serve with barbecue sauce, mustard, salsa, or any combination of your favorites. This pulled pork works well alone as well as for tacos, casseroles, sandwiches, and more.

- 1 (4 to 6 pound) Boston Butt pork roast
- 1 ½ cups chicken or beef stock
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 tablespoons dried parsley
- 2 tablespoons dried onions
