We love to eat chicken fajitas! In fact, we usually eat them about every third Sunday for our big meal of the day, and it's one of my favorite meals. With an Instant Pot, you can quickly cook chicken fajitas and have them on the table in no time.
The Instant Pot cooks both the chicken breasts and sliced onions and peppers at the same time and they're easy to season with taco seasoning.
Pour water into the pressure cooker and place the trivet inside.
Put the chicken breasts on top of the trivet and sprinkle with 1 tablespoon taco seasoning.
Top the chicken with peppers and onions. Cook’s note: Peppers and onions should be cut in 1/2 inch thick strips or thicker to keep them from falling apart while cooking. Sprinkle with remaining taco seasoning.
Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook on high for 10 to 15 minutes depending on the number of chicken breasts. For instance, to cook two chicken breasts, cook for 10 minutes. Quick release the pressure.
Carefully remove the chicken breast and vegetables from the pressure cooker. Place the chicken breasts on a cutting board and slice thin.
Toss the chicken breasts pieces with vegetables and serve with fajita toppings like shredded cheese, sour cream, avocado, salsa, and chopped cilantro.
- Boneless, skinless chicken breasts
- 2 tablespoons taco seasoning
- Bell peppers, various colors, sliced in ½ inch thick strips or thicker to keep them from falling apart while cooking.
- Onion, sliced in ½ inch thick strips or thicker to keep them from falling apart while cooking.
- Water, minimum required for the pressure cooker
- Tortillas
- Toppings like shredded cheese, sour cream, avocado, salsa, and chopped cilantro.
