Easter is such a fun holiday with many great themes you can use for treats and crafts. I love mixing my favorite cookies (chocolate chip) with a bunny cookie cutter to make these super cute Chocolate Chip Easter Bunny cookies that are a perfect dessert for the whole family.
Be sure to cut the cookies as closely together as possible. Each batch makes between 4 and 6 bunny cookies.
Preheat the oven to 350 degrees and line an 8x8 or 9x9 baking dish with parchment paper and spray with non-stick cooking spray.
Combine the melted butter, egg, egg yolk, vanilla extract, granulated sugar, and brown sugar. Then, slowly fold in the baking soda and flour. Lastly, add in the chocolate chips.
Pour the cookie dough mixture into the prepared baking dish and evenly spread using the back of a spoon. Place in the oven and bake 20-25 minutes until golden brown. Remove from the oven and let cool completely on a cooling rack.
Once it has cooled, lift the baked cookie out of the baking dish. Use the bunny cookie cutter to cut out each bunny and set aside.
Pour ½ of the Wilton milk chocolate candy melts into a microwave-safe bowl. Heat in 30-second increments, stirring until melted. Let the chocolate cool a few minutes.
Attach the small round frosting tip to the disposable piping bag and fill it with melted chocolate.
Raid the Easter candy for some pink jelly beans. Then, squeeze a small amount of melted chocolate onto the back of the jelly beans and bunny eyes and put it in place on the cookie.
Lastly, give each bunny a mouth by forming a double sided 'J'. Repeat each step with all bunnies.

Hi there, I cannot wait to try this recipe. I had to ask you something before I go ahead. You had mentioned to use the bunny cookie cutter after the cookies are baked and cooled?? Wouldn’t it crumble the cookies? Thanks 🙂

No, as long as the cookies are completely cooled, they should do fine in cutting them out after they are baked. If you cut them before baking, the cookie will spread out while baking and not look as much like a bunny.
