
We love to make (and eat!) cookies. And if you can combine both cookies and frosting into a whoopie pie, then even better.
These Rainbow Sprinkle Whoopie Pies are bright and colorful for spring, and would also make a great treat for St. Patrick's Day or Easter. Add some chocolate gold coins, and you've got some gold mixed in with the rainbows!
Made with a white, vanilla cake mix and rainbow sprinkles (or a Funfetti cake mix), these cookies are both moist and delicious. Plus, you can use canned frosting to make it even easier to create.
Preheat oven to 350 degrees and then combine the cake mix, egg, and butter in a medium bowl. Beat together until well mixed. With a spoon, gently stir in the sprinkles, adding as many as you would like.
Roll the dough into about 1-inch balls and place on a cookie sheet.
Lightly press the cookies down about halfway with the bottom of a cup and bake for 8-10 minutes.
Remove the cookies from the oven and let them cool completely.
Divide the frosting into separate bowls and mix in 3 or 4 colors of your choice.
Place each color of frosting into a plastic baggie, and snip the corner off to use for piping.
Pipe a round mound of frosting on the bottom of one cookie and gently press another cookie on top of it.
Repeat this until all the cookies are frosted and topped with another cookie.

- 1 Container Whipped White Frosting
- 1 Egg
- 1 Stick Butter, softened

Instructions
