In Michigan, it's tradition for most families with a high school graduate to host an open house for their graduate. Basically, each open house is a drop in party for a set number of hours and you can always count on there being a TON of food!
I love these graduation cupcakes since they're easy to make in quantity and so cute. You can adjust the frosting color to match the school colors or just the graduate's favorite color. And, the graduation cap is so simple to put together with a Rolo and a Ghirardelli chocolate square.
Place blue frosting in a piping bag fitted with a 2A icing tip. Pipe frosting in a layer on cupcakes in a spiral motion creating a small mound in the center.
On the smooth side of each chocolate square, pipe a curved line to represent the tassel. Add a small dot to the middle.
Use frosting to attach one Rolo candy to each chocolate square. (The frosting will not be seen once pressed into the cupcake so the color does not matter.)
Press the candy into the top of the cupcake.Add sprinkles around the candy.
