One of the things I love about being a Good Cook Kitchen Expert is that I get to try out fun cookware tools. I was really excited when I received the Good Cook Spring Bark Mold (along with a cute Good Cook Spring Spatula from the Sweet Creations spring cookware tools collection).
The Spring Bark Mold comes with a recipe for Spring Treat Bark, but I wanted to get a bit creative and try something different. I thought about making a toffee in the mold, but I ultimately decided to do a different take on my shortbread recipe in the mold. I previously modified my shortbread recipe to create Chocolate Dipped Shortbread using other Sweet Creations tools.

Sweet Creations Spring Bark Mold Shortbread Cookies
Ingredients:
- 2 ½ cups Flour
- ½ cup Powdered Sugar
- 2 sticks Butter (not margarine)
Directions:
Mix and knead the ingredients. I used the kneading beater on my Kitchen Aid, although you can just mix and knead really good by hand. I pressed all the dough into the Sweet Creations Spring Bark Mold, making it flat and even. Bake at 350 degrees for about 20 minutes (or until the edges arebrown).
Once the cookies were cooled, I flipped them over and gently released it from the mold. The, I broke the cookies into squares and trimmed any excess cookies from the edges to make them pretty.
