I love both chocolate and cheesecake, which is why these Strawberry Cheesecake Brownie Cups are delicious - they combine both of my loves! They are easy to create with a boxed brownie mix and look super fancy as a dessert for guests (or just your family). The cheesecake center has a hint of strawberry is super yummy.
Preheat oven to 350 degrees F and mix the brownie ingredients as stated on the box. Spray cooking spray into the cups of a cupcake pan and fill the cups ⅔ of the way full with brownie batter. Bake for 22-25 minutes or until a toothpick inserted into the center of one of the cups comes out clean.
Immediately after removing the pan from the oven, spray the bottom of a small glass with cooking spray and use it to press down the center of each brownie to make the cups (as shown above). Allow the brownies to cool completely before trying to remove them from the pan.
While the brownies are cooling, make the strawberry cream cheese. Roughly chop 6-7 strawberries and place them in a food processor. Pulse until the strawberries have broken down into a puree.
Mix together the cream cheese and powdered sugar using the paddle attachment of a standup mixer (like a KitchenAid mixer). With the mixer on low, add in the strawberry puree one teaspoon at a time until the desired consistency and flavor is reached.
Place the frosting in a piping bag with a frosting tip and pipe the frosting onto each brownie cup and garnish with a fresh strawberry. Store the Strawberry Cheesecake Brownie Cups in the refrigerator until ready to serve.
