Growing up, I didn't really like meatloaf. Maybe because it was too dry or I just don't like ketchup (I know...crazy!), but it was not my favorite meal. I had to suffer through it many a time, since it was my dad's favorite and the one he always requested for his birthday meal.
However, that has changed since I tried this meatloaf recipe. It's got lots of flavor and it's definitely not dry. Plus, you can use barbeque sauce or ketchup on the top.
Ingredients:
1 ½ lbs. ground beef or turkey
1 onion finely chopped
2 eggs
1 cup salsa
¾ cup old fashioned oats (uncooked)
1 pkg. Knorr Vegetable Soup Mix (or onion mix if you can't find vegetable)
¼ teaspoon black pepper
½ cup ketchup or barbeque sauce
Directions:
Mix all the ingredients except the ketchup (or barbeque sauce) in a bowl and press into a 9x5 loaf pan. Spread the ketchup or barbeque sauce over the top.
Bake at 350 degrees for about 60 minutes until the meatloaf is no longer pink in the center and the juice is clear. Let it sit out for about 5 minutes before slicing and serving.
Tips for Future Meals:
I tend to split my meatloaf into 2 pans and then freeze the second pan uncooked so that I can thaw it and then throw it in the oven another night. Don't put the ketchup or barbeque sauce on the freezer pan until right before you put it in the oven.
